In the morning, head to a traditional farmhouse that produces organic mozzarella and other Apulian cheeses. Meet the owner and learn how time-honored techniques and organic practices come together to produce some of the region’s most beloved cheeses. Round off the experience with a light lunch of Apulian specialties and wine.
In the afternoon, reach Alberobello, the house of the 1400 trulli, declared World Heritage Site in 1996 by the UNESCO. Enjoy a guided walking tour through the curious white-washed structures have pyramidal, conical or domed roofs built of corbelled local limestone without mortar. Step into the Trullo Sovrano, the biggest one built on two floors.

In the morning, visit Lucciole, an artisanal studio in the heart of Fasano, set inside a beautifully restored former oil mill. Led by designer Donato Potenza, it creates handcrafted wooden luminaires inspired by Puglia’s traditional festive lights, reinterpreted with a modern, artistic touch. In their hands-on workshop, guests discover the story and craftsmanship behind these iconic illuminations and create their own small wooden luminaria to take home—a charming blend of culture, creativity, and authentic Apulian tradition.

In the morning, head to Monopoli, located in one of the most beautiful coastal lines of the adriatic Sea. The town features the imposing walls of the fortified abbey of Santo Stefano and lovely sandy beaches. On the coastal strip south of Bari sits the old village of Polignano, located on a sheer cliff overlooking a sea full of natural grottoes and caves.
Explore its charming alleys on a guided walking tour of the town centre, of Greek origin, that stands on a karstic promontory that shows a continuous front of buildings, as impenetrable as a defence wall against attacks from the sea. break at a coffee shop and taste the special caffé di Polignano: a mix of coffee, sugar, lemon, cream and amaretto. Lunch at leisure and rest of the day free.

In the morning, set out on a walking tour to discover Lecce, the "Florence of the South," starting with a taste of the city's signature iced coffee with almond milk. Visit Piazza del Duomo, known as the city's elegant "living room," with its magnificent Baroque cathedral of Maria Santissima Assunta. Cap off the experience with a pasticciotto tasting, a traditional cream-filled dessert. Lunch at leisure.
In the afternoon, enjoy a workshop in Lecce. Lecce is famous for its stone - pietra leccese - a limestone rock extracted only in the region of Salento, famous for its malleability and used in the baroque architecture of the capital of Salento. Visit the workshop of an internationally renowned sculptor in the Lecce area, and learn from him the the tradition of Lecce stone. Discover the art of sculpting and try your hand working with your own personal block of stone. At the end of the activity, keep the carved object as a souvenir

In the morning, enjoy a walking tour of Otranto, a natural bridge between the Mediterranean and the Middle East. Explore the ancient village, recognised by UNESCO as a cultural heritage site as "messenger site of peace", crossing Porta Alfonsina. Here you will find the Aragonese Castle, a defensive fortress of the city, and the marvelous cathedral dedicated to Santa Maria Annunziata, built in Norman times on ancient Messapian, Roman and early Christian vestiges. The beautiful mosaic floor is a masterpiece created by the monk Pantaleone between 1163 and 1165 that represents the tree of life. Cap off the excursion tasting a pasticciotto, a typical local dessert.
