Under almost 5 metres underwater, the Ithaa Undersea Restaurant at Conrad Maldives in Rangali Island is the first all-glass underwater restaurant in the world. The design maximizes the experience for the guests since they have 180-degree panoramic view under the Indian Ocean and the coral garden along with its teeming marine life. For lunch they offer a four-course menu with the famous charcoaled reef lobster as main course. The six-course dinner can include prawn tartare, Oscietra caviar, and sous vide veal tenderloin.

While it features huge glass windows so guests can see marine life underwater, the design of the interior is actually clam inspired and it makes use of materials from the sea. Guests can witness different marine animals such as moray eels, Hawksbill turtles, and shoals of fish while sipping a drink from their wide selection of cocktails. They also serve wagyu beef, barramundi, lamb chops, and local lobster.
